Broccoli & Cheese Soup (Green Monster soup)

3-4 large potatoes

1 large or 2 med. onions

1 large or 2 small heads of broccoli

1 tbsp. butter

3 cups vegetable or chicken broth

1-2 cups milk

1/3 cup flour

1 cup shredded cheddar cheese

salt and pepper to taste


In a pot, chop onion and saute in butter until soft, a few minutes. Add chopped potato and broth. Bring to a boil. Reduce heat and simmer until potatoes are soft, about 10-15 minutes. Chop broccoli (and peeled broccoli stalk) and add to pot. Cook another 5-10 minutes, until broccoli is tender.

In a small bowl, blend together 1 cup of the milk and the flour until smooth. Stir into the soup and cook until just thickened. Add more milk if desired, if soup is too thick. Remove from heat and stir in shredded cheese. Serve chunky or puree for a creamy soup.

Serve 4-6
