THE HOOT

Well we made it by the hair of our skinny skin skin.  No frost damage last night.  Basically you can NEVER TRUST the weatherman.  When we see anything saying 39 degrees it could be 10 degrees lower!  The fog saved us last night!  We had a low of 36!  Close call for thousands of plants, tomatoes, potatoes, peppers, zucchini, eggplant, watermelon, winter squash to name a few.  We had 10 people covering beds of sensitive crops all afternoon yesterday until the evening!  It’s always a freak out, but well worth it.  The set back would have been enormous!

We hope that you all have enjoyed the spring CSA.  This is the last week for Spring CSA share deliveries.  We start up with the summer season next week!

As the daylight hours grow longer steadily towards the first day of summer, excitement to eat more variety than spring fare continues to grow like the lengthening of the days!!!

Thank you for joining us on the tease of spring shares.  We are limited by the space our hoophouse tunnels can provide, as this is what gives us the ability to offer spring shares.  Only the garlic scallions come from out of the tunnels!  We did build another huge 500’ x 30’ hoophouse this spring, but between getting the financing together and then organizing with the builders and coordinating construction between weather events we weren’t able to get plastic on it until it was too late to plant into for this spring.  But next spring we will have a whole other hoophouse, so that’s 3 500’ x 30’ tunnels = 45,000 sq ft!!!  We will have more ground in season extension, so more room for diversity as well as more shares as we sold out this spring season!!!!

IN YOUR BOX:

The radishes, are such a brilliant red.  These little gems are a staple of many country folks table in and throughout the spring.  In our family we like to slice them thin, lay them out on a plate, then sprinkle salt and drizzle olive oil on them, and then wait until they sweat out a little of their juicy spice!  These are a regular appetizer on our table.  Sometimes they get gobbled up by the kids before I get to the table!

You can also turn them into pickles to enjoy on many things later! Here’s a link to a quick pickle recipe, by Love and Lemons.

Rhubarb!!  So Rhubarb can be frozen if you want to save this for a pie to make with strawberries later in spring.  It does not need to be blanched.  Simply rinse, place it on a cloth to dry then cut it up into pieces.  After you have Rhubarb cut into pieces, store these pieces in a zip lock freezer bag, press flat to get the air out. Seal and freeze.  When you want to use it there is no need to thaw it, just use like you would fresh Rhubarb.  We like Rhubarb either in a pie, or just make a sauce to put on vanilla ice cream or it’s also amazing on a pork chop.  Who’d thunk of that, a good chef made this for us once, it was delicious, sort of unforgettable!!  Rhubarb makes everything better, it’s got that smack of flavor in the back of your mouth that unique and it pairs well with almost any fruit!

Add on Share Varieties:

Mushrooms:

Shiitake mushrooms have a bold smokey and earthy flavor, with a texture that is both meaty and buttery when cooked. These mushrooms are rich in vitamins and are a great addition to almost any food.

Cheese:

Hootenanny “A goat’s milk Gouda cheese made from spring and summer milk. It is smooth with “notes of hickory nuts and wild flowers within a cream wax rind. Pairs well with crisp white wine or an amber ale”
