Parsley contains Vitamins A, C, and K, and minerals such as Calcium, Iron, and Magnesium. Parsley can be an immune system booster, and can contribute to liver and kidney health.

Storage Tips:

To store parsley, loosely trim stems and place onto a jar with an inch or two of water. Cover lightly with a plastic bag and keep in the fridge. Parsley is also good dried if you have a dehydrator. To freeze fresh parsley, fill an ice cube tray with a small layer of water (a little less than half full), and remove herb leaves from the stems. Place them into the ice cube trays and cover with the water. These are convenient to toss into soups.

Uses:

Parsley is often used to add flavor to salads, salsas, soups, stews, sauces, and fish recipes. Toss some raw parsley in with your salad, or make some parsley pesto.
