Zucchini is a particularly good source of Vitamin A, but also contains vitamins C, K, and B6, as well as Manganese, Potassium, Magnesium, Folate and Copper. Zucchini helps promote healthy digestion, as well as contribute to heart health.

Storage Tips:

Store zucchini in a plastic bag in the crisper drawer of your fridge. Zucchini prefers minimal humidity. To freeze, wash and cut zucchini in your preferred way, then blanch and freeze on a baking tray. Once frozen, move to a freezer bag. Without blanching, zucchini can become watery and soft after thawing.

Uses:

Zucchini has many delicious uses including zucchini bread, zucchini patties, oven baked, pan fried, added to pasta, or stuffed zucchini boats.
